When I was little I remember my mum baking coconut macaroons. She had a cook book with illustrations, like “bake with your kids” kinda style and I really liked baking coconut macaroons or as they where called in that book coconut tops. They where shaped like cones and you dipped the coconut macaroons in melted/tempered chocolate.
Since then whenever I’ve come across them I’ve bought one to relive those childhood moments but very often I’ve been disappointed. Until I got hold of this recipe from Claire Ptak at Violet Bakery. Turns out you don’t need the chocolate. But if you need a chocolate fix, try my Super Lux Chocolate Chip Cookies.

Ingredients:  

  • 4 egg whites
  • 250g caster sugar
  • 1/4 tsp fine sea salt
  • 1 tbsp honey
  • 200g unsweetened desiccated coconut
  • 1/2 tsp vanilla extract

Method:

Add all the ingredients into a medium sized saucepan and put on medium heat. Initially it’s tough to mix the ingredients together but as the sugar heats up, it’ll blend nicely. Keep stirring as you don’t want the mixture to stick to the bottom of pan and burn. It’ll start to get glossy. Keep stirring.

As it dries out slightly, it’s about ready. I tend leave the mixture to cool, which makes it more manageable when you start to shape the macaroons. Preheat the oven for 160 C fan. Prepare a lined baking tray. I like to use an ice cream scoop to measure out and shape the macaroons. they should easily fit on one tray as they don’t increase in size. Bake for about 17-20 mins until golden brown. Leave them to cool completely before serving or storing.

Instructions
 

  • Preheat oven to 160C fan
  • Add all ingredients in a medium sized saucepan on medium heat.
  • Stir the ingredients, making sure it doesn't stick to the bottom
  • Use an ice cream scoop to measure out the macaroons and place them on a lined baking tray
  • Bake for 17-20 mins, until golden brown
